WACKY WEDNESDAY


So, I was asked to make a cake for Wacky Wednesday and celebration of Dr. Seuss' 100th birthday at the School.  Oh boy did I.   From Planning to Execution it was a fun and wacky journey.

Step 1:  Design and draw cake.  I chose red velvet with white cream cheese buttercream covered in light blue fondant because it would look like the tell tail hat when you cut into the cake.
I used the Southern Red Velvet Cake Recipe and it is undeniably delicious.

I also used a red velvet emulsion that was specially formulated for red velvet cakes.

Step 2:  Made test cake to ensure delicious and doable.

Step 3:  2 days before delivery I baked 3 12x18 red velvet sheet cakes, layered and frosted with cream cheese buttercream using my own personal recipe.

Step 4:  layer and frost the cakes after cooling the place in the fridge to cool until the fondant could be made.





Step 3:  Prepare all the fondant for entire project.
I used the fondant recipe and advice from Craftsy.  It was very well written and easy to follow.

Roll and cover cake with fondant.

Step 4:  Make rice krispie treats for  hat.  Form into Hat, cover with fondant and paint.  Use your own recipe and press down into a jelly roll pan, cover and put aside until you are ready to form figures.

Step 5:  Make fish out of fondant and fit to top of hat.  Use gel food coloring to achieve desired color and just work until you get your shape/figure.  I pulled up a lot of pictures of that silly fish to use as my guide.









Step 6:  Mold chocolate fish and moustaches on sticks for decorations.  If you can't get the candy melts (Michael's, Party City or any Craft store has these) in the color you require, just use a bit of color gel to get adequate results.  Be careful because adding too much food coloring can change the consistency of the melted chocolate.  That's just annoying.  Just pour the melted chocolate into the mold and let harden.  It couldn't be more simple and they pop right out when done.  I put mine in the fridge or freezer for a few minutes to express the process.

Step 7:  Assemble and decorate cake.  Use paintbrush and gel coloring for the lettering and icing to adhere the molded fish to the sides.

Step 8:  Use cotton candy covered blowpops for Lorax Truffula Trees and blue buttercream topped with blue cotton candy for the Thing 1 & 2 cupcakes.
